Grab six large eggs, one medium avocado, one tablespoon of fresh lime juice, salt and pepper to taste, and a sprinkle of paprika. 

Hard boil the eggs, let them cool, then peel and cut in half. Scoop out the yolks and mix them with your avocado, lime juice, salt, and pepper. Fill the egg whites with the blend, sprinkle some paprika to taste, serve chilling, and prepare for the rave reviews. With these eggs, you’re not just eating a snack. You’re having an experience. Let’s get cracking. 

3. Green Spinach Pancakes

Green spinach pancakes might be a little unexpected, but they’re sure to be a hit this holiday. Share healthy veggies in a delightful package with green spinach pancakes. 

Gather up one cup of fresh spinach, one cup of flour, one egg, a 2/3 cup of milk, and salt and pepper to taste.

Blend the spinach, egg, and milk until smooth in your blender. Transfer the mixture to a bowl and gently stir in the flour, salt, and pepper. When your ceramic pan is heated with a drop of oil, pour in a small amount of pancake batter and cook until bubbles appear, then flip. Serve hot with a dollop of light sour cream or a classic maple syrup.

4. Matcha Green Tea Cookies

Switching gears to the sweet side, we present these soft, mouthwatering matcha green tea Cookies. Cozy up with a cup of tea and one (or three — no judgment here!) of these gems.

The ingredients include two cups of flour, a 3/4 cup of sugar, two tethered matcha green tea bags, one cup of unsalted butter, one egg, and 1/2 teaspoon of vanilla extract.

Mix dry ingredients in a bowl. In a separate bowl, beat butter and sugar until fluffy, then add the egg and vanilla extract. Gradually add dry ingredients, combining well. Scoop tablespoon-sized balls onto a ceramic baking tray, then bake at 375°F (190°C) for about 10-12 minutes or until edges are slightly golden. 

5. Pea and Mint Soup 

Our last entrée is a green classic — pea and mint soup. It’s a perfect combo of flavors with a vibrant color that screams St. Patrick’s Day!

Get two cups of frozen peas, one onion, one garlic clove, one cup of vegetable stock, fresh mint, and salt and pepper to taste

Sauté your onion and garlic in a touch of oil inside your ceramic pot until softened. Add frozen peas, vegetable stock, and fresh mint. Simmer until peas are thoroughly cooked. Once cooled slightly, blend until smooth. Adjust seasoning, and your lovely green soup is ready to be savored!
